1 month ago, I hadn’t heard of Chimichurri. Then I grew carrots and the rest is history!
Ingredients:
- Green tops from 1-2 carrots & radishes (about 1 cup)
- 1/2 red onion
- 2 teaspoons oregano
- 1/2 teaspoon cumin
- 1 teaspoon ground sweet paprika
- 1 garlic clove (fresh or minced)
- 1 teaspoon salt
- Pepper to taste
- 1/4 cup apple cider vinegar
- 1/4 cup olive oil
Method:
- Wash your greens very thoroughly and finely chop with the red onion (a blender is great for this)!
- Mix in all the other ingredients.
- Bottle in a sterilised bottle (boiled) or freeze in small batches in containers.
Great added to pizza, zucchini slice or as a dipper for fresh or roasted vegetables!
